1. To make the mango relish, cook the mango in a large pan with the caster sugar and a little water until soft but not mushy. Drain well. Dry fry the spices over a low heat for 2-3 minutes, then stir in the mango and enough brown sugar to sweeten to taste. Cook for 2-3 minutes more, then remove from the heat and leave to cool.
2. To make the lentil sauce, heat the oil in a medium saucepan and gently fry the onion, pepper, chilli and garlic for about 5 minutes until softened, stirring occasionally. Season with salt and pepper and stir in the cooked lentils, tomatoes, tomato puree and a splash of water. Cook together for about 15 minutes, stirring occasionally and adding extra water if necessary.
3. Meanwhile, heat the oil for the monkfish in a large non-stick frying pan. Add the fish and cook for about 5 minutes on each side until lightly browned and cooked throughout. Spoon some of the lentil mixture on to four plates. Top with the monkfish and finish with spoonfuls of the mango relish. Serve.
