
Simon Wright cooks up a veggie treat with this asparagus dish, Flemish style on Come Dine With Me Macclesfield
1. Peel the ends of the asparagus 2-3cm up the stalk. Cook the asparagus in salted water for 4-5 minutes until tender without being too soft.
2. Place a small pan over a medium heat and add the eggs, 185g of the butter, parsley, nutmeg, salt and pepper. Stir over for a few minutes until the sauce comes together, adding a few drops of water if necessary.
3. Drain the asparagus and toss in the remaining butter to glaze. Arrange on a large, warm serving platter. Spoon the egg sauce over the lower end of the spears. Garnish with the parsley sprig. Serve immediately.
