
Keep it classic, keep it classy, like Come Dine With Me Huddersfield's Matt Buckingham
1. Melt the butter in a large saucepan and gently fry the onion until softened, stirring occasionally.
2. Add the tomatoes and garlic and cook for 3 - 4 minutes until the tomatoes begin to soften. Pour over the stock, wine and tomato paste. Bring to the boil, then reduce the heat slightly and leave to simmer for about 30 minutes, until the tomatoes are very soft and pulpy.
3. Remove from the heat and blitz with a stick blender until as smooth as possible. Add the basil leaves and blitz into the soup. Alternatively, allow the mixture to cool for a short while, then transfer to a liquidiser or food processor and blend.
4. Pass the soup though a fine sieve into a clean pan. Stir in the cream and seasoning to taste. Heat gently and serve in warmed bowls, garnished with a swirl of cream and fresh basil leaves.
