
Laura slow roasted cherry and plum tomatoes as part of her Come Dine With Me Huddersfield starter
1. Preheat the oven to 120°C/Gas ½. Make a small cross in the base of each tomato and place in a large bowl. Cover with just-boiled water and leave for about a minute until the skins start to shrink back from the tomato flesh.
2. Drain well. When cool enough to handle, remove the skins and cut the tomatoes in half. Scoop out the seeds with a teaspoon and discard. Put the tomatoes, cut side up, in a shallow ovenproof dish.
3. Add the cherry tomatoes and drizzle with the oil. Sprinkle with sugar and the thyme leaves. Bake in the centre of the oven for 2-3 hours until soft and slightly dry. Remove from the oven and leave to cool.
4. Serve sprinkled with basil leaves, a pinch of salt and plenty of ground black pepper.
