1. Mix the yeast with the flour and salt in a large bowl. Make a well in the centre and add the water and oil. Mix well with a wooden spoon until a dough is formed. Turn out onto a lightly floured surface and knead for 5 - 10 minutes or until the dough is smooth and elastic.
2. Divide the dough into six balls and place in clean terracotta plant pots lined with well buttered baking parchment. (Only use new pots for cooking.) Cover loosely with oiled cling film. Leave in a warm place to rise for about an hour or until doubled in size. If you don’t have any pots, form the dough into balls and leave to rise on a baking sheet.
3. Preheat the oven to 190°C/Gas 5. Remove the cling film and place the pots on a sturdy baking sheet. Bake the bread for 30 minutes until well risen and golden brown. Cool for a few minutes in the pots then turn onto a wire rack. Serve freshly baked.
