
Neil cooked up this white fish with pesto, presto, on Come Dine With Me Huddersfield
1. Preheat the oven to 200°C/Gas 6.
2. To make the pesto, put the garlic, pine nuts, basil and cheese in a food processor and blend until thoroughly chopped. Gradually add the oil, blending until well combined. You may need to remove the lid and push the mixture down a couple of times. Add the water if the pesto appears too thick. Season with salt and pepper to taste.
3. Skin the fish and rub on both sides with oil. Put the fish on a lightly oiled baking tray and spoon a generous amount of pesto onto each fillet. Bake for about 15 minutes until the pesto bubbles and the fish is just cooked.
