Chris cooks up his eponymous chicken and veg curry for his Come Dine With Me Celebrity Special guests

Serves 4

Ingredients

  • 2 tbsp olive oil
  • 2 largish onions, peeled and finely chopped
  • ½ tsp each salt and freshly ground black pepper
  • 4 garlic cloves, peeled and finely chopped
  • 2 tbsp hot Madras curry paste
  • 4 large potatoes, peeled and cut into small chunks
  • 400g can chopped tomatoes
  • 300ml chicken stock made with a cube or preferably home made stock
  • ½ medium cauliflower, cut into small florets
  • 200g green beans, topped and tailed
  • 100g frozen peas
  • 4 boneless, skinless chicken breasts, cut into small chunks
  • 200g spinach, washed and drained well
  • 3 tbsp finely chopped fresh coriander

Method: How to make Chris' chicken and vegetable curry

1. Heat the oil in a large saucepan and fry the onions for 3-4 minutes until pale golden brown. Add the salt and pepper, then garlic and cook for 1 minute more.

2. Stir in the curry paste and continue frying for 1-2 minutes. Stir in the potato chunks and turn until coated in the paste. Tip in the tomatoes and cook over medium heat for 2 minutes, stirring constantly. Pour over the stock and bring to the boil.

3. Reduce the heat to a simmer and cook for 15 minutes, stirring occasionally. Add all the remaining vegetables, except the spinach, cover with a lid and continue cooking for about 30 minutes, stirring every now and then.

4. After the vegetables have been cooking for about 10 minutes, add the chicken and stir well. Five minutes before the end of cooking time, add the spinach and cook until the vegetables are tender and the chicken is thoroughly cooked. Garnish with lots of coriander.

5. Serve with a chutney and fresh yoghurt mixed with chopped cucumber, mint, garlic and a drop of olive oil, plus a small carton of tsatziki - a bit of a cheat!
