Greg Basire mixed food and booze with this exciting tapas dish on Come Dine With Me West London

Serves 4 as tapas

Ingredients

  • 3 tbsp olive oil
  • 1 medium onion, peeled and finely sliced
  • 3 cooked medium potatoes, peeled and sliced
  • 3 medium free-range eggs, separated
  • 25g butter
  • 1 garlic clove, peeled and finely sliced
  • 1 beef stock cube dissolved in 100ml boiling water
  • 2 tbsp brandy

Method: How to make tortilla and brandy sauce

1. Heat the oil in a small flame-proof frying pan and fry the onion and potatoes for 5 minutes until the onion is softened and the potatoes are beginning to brown.

2. Whisk the egg whites in a large bowl until fluffy and beat the egg yolks in a separate bowl until smooth. Fold the egg yolks into the egg whites then stir all the eggs into potatoes and onions.

3. Cook over a medium heat without stirring until the eggs begin to set. Put the pan under a preheated medium grill and continue cooking until the tortilla is lightly set. Remove from the heat and put to one side while the sauce is prepared.

4. Melt the butter in a small saucepan and gently fry the garlic until softened. Add the stock and brandy and bring to the boil. Cook over a high heat until the liquid reduces to the consistency of single cream, stirring occasionally.

5. Invert the tortilla onto a board - you may need to loosen the sides with a round-bladed knife. Cut into wedges and transfer to a plate. Spoon over a little of the brandy sauce and serve.
