Caprice goes Greek in Celebrity Come Dine With Me with her take on spanakopita - spinach and feta pastry - a great starter or anytime snack

Serves 10-12 as a starter, 6 people as a main course

Ingredients

  • 150ml olive oil (approximately)
  • 1 large onion, peeled and finely chopped
  • 4 spring onions, trimmed and finely sliced
  • 350g fresh spinach leaves, washed and tough stalks removed
  • 1 pack of filo pastry, thawed if frozen
  • 300g feta cheese, drained
  • 3 large free range eggs
  • 120ml double cream
  • small bunch fresh dill, finely chopped
  • small bunch fresh parsley, finely chopped
  • 2-3 mint leaves, finely chopped
  • milk for glazing
  • 1 tbsp sesame seeds, for scattering
  • salt and freshly ground black pepper

Method: How to make spinach and feta pastry

1. Heat 2 tbsp of the oil in a large saucepan and fry the onions for 5 minutes until soft, but not coloured. Add the spinach and cook for 12-15 minutes until soft, allowing the water from the leaves to evaporate.

2. Preheat oven to 200°C/gas mark 6.Take three filo pastry sheets and brush lightly with oil on one side. Place in the base of a lightly oiled, deep 30x40cm baking tin, one oiled sheet layered on top of the next. They should overlap the sides of the tin.

3. Spoon the spinach and onion mixture over the pastry and scatter with crumbled feta. Beat the eggs and cream together with a large metal whisk and pour on top. Sprinkle with the herbs and season generously with pepper and salt.

4. Use a fork to lightly combine the cheese and egg mixture with the spinach. Fold in the filo sheets, enclosing the spinach mixture. Brush with oil.

5. Place another filo sheet on top and brush with oil. Repeat with two more sheets. Brush lightly with oil and snip off most of the excess pastry from around the edges, leaving just enough to tuck in all the way around the tin.

6. Glaze the pie with a little milk and scatter sesame seeds over the top. Prick the pastry all over with a fork. Put the pie in the preheated oven and cook for about an hour, covering loosely with foil if it starts to over-brown.

7. Remove from the oven when the filling is set and the pastry is golden. Place a tea towel over the top and leave for about 30 minutes before serving.
