Amii van Amerongen dished up a dessert with a kick on Come Dine With Me West London

Serves 4

Ingredients

  • 5 large uniformly-sized lemons
  • Finely grated zest 2 large unwaxed lemons
  • 250g caster sugar
  • 325ml water
  • 2-3 tbsp vodka, chilled

Method: How to make sorbet drenched in vodka

1. Cut off the top third of each lemon and scoop out all the flesh using a grapefruit knife or grapefruit spoon, just inside the rind. Circle the flesh, taking care not to puncture the rind. Press the flesh through a sieve and reserve all the juice. Set aside.

2. Trim a sliver of rind from the base of each lemon so they stand upright without falling over. Take care not to slice too deeply. Freeze the empty shells until solid.

3. Combine the sugar and water in a saucepan and place over a medium heat until the sugar dissolves. Stir in the lemon zest and bring to the boil. Leave to boil for 2 minutes then remove from the heat and leave to cool. Strain the lemon syrup through a fine sieve and stir in 250ml of the reserved lemon juice.

4. Transfer the mixture to an ice cream maker and churn until frozen. Spoon into the frozen lemon shells and top with the reserved lemon tops. Put on a small tray and return to the freezer until ready to serve. Stand for a few minutes at room temperature before serving. Serve dribbled with vodka.
