Linda Lusardi mixes things up with a starter of posh scrambled eggs to kick off her Celebrity Come Dine With Me dinner party.

Serves 4

Ingredients

  • 200g undyed smoked haddock fillet
  • 2 tsp lemon juice
  • 175-200g sliced smoked salmon
  • 6 large free-range eggs
  • 4 tbsp double cream
  • 25g butter
  • 2 tbsp finely chopped fresh parsley, plus sprigs to garnish
  • Salt and freshly ground black pepper
  • ½ cucumber, trimmed and finely sliced
  • 4 small vine tomatoes, quartered
  • 4 cooked king prawns

Method: How to make smoked salmon scramble parcels

1. Preheat the oven to 190°C/gas mark 5. Put the haddock fillet on a small baking tray lined with a piece of lightly oiled foil. Cover with a second piece of oiled foil. Bake for 12-15 minutes or until the haddock is cooked - it should flake easily. Set aside.

2. While the haddock is cooking, line four ramekin dishes with cling film and sprinkle with a little lemon juice. Place thin slices of smoked salmon in the dishes to completely cover the base and sides, leaving a little overhanging the edges. Set aside.

3. Beat the eggs with the cream, a pinch of salt and some ground black pepper. Melt the butter in a medium, non-stick pan and cook the eggs for about 3 minutes over a low heat, stirring regularly until nicely scrambled. Remove from the heat.

4. Flake the warm haddock into chunky pieces, discarding the skin and any stray bones. Stir the haddock and chopped parsley into the scrambled eggs. Adjust seasoning. Spoon into the ramekins and fold the excess salmon over to cover. Press lightly.

5. Arrange sliced cucumber in the centre of four plates. Invert the salmon parcels onto the cucumber and remove the cling film. Garnish with tomatoes, prawns and sprigs of parsley. Serve immediately.
