Dave Ward served up a berry nice dessert on Come Dine With Me Torbay

Serves 4-6

Ingredients

  • 500g fresh or frozen raspberries, thawed if frozen
  • 450ml extra thick double cream
  • 3 tbsp demerara sugar

Method: How to make raspberry crunch

1. Scatter the raspberries into a heatproof, shallow dish. Spoon the double cream over the top and smooth the surface with a rubber spatula or round-bladed knife.

2. Sprinkle the sugar evenly over the surface and caramelise carefully using a cook’s blow torch. If you don't have a cook's blow torch, put the dish on a tray and caramelise under a very hot preheated grill. Take care not to heat for too long or the cream will melt. Leave for a few minutes to allow the caramel to cool and harden. Serve.
