With Champagne for her real friends, Wendy cooks up a storm for her Come Dine With Me East Yorkshire guests.

Serves 4

Ingredients

  • 4 skinless, boneless free-range chicken breasts
  • 600ml pink Champagne or sparkling wine
  • 2 tsp olive oil
  • 400g mixed mushrooms, wiped clean and halved if large
  • 142ml carton double cream
  • 4 tsp chopped fresh tarragon
  • Salt and freshly ground black pepper

Method: How to make Champagne chicken in a mixed mushroom sauce

1. Place the chicken breasts in a single layer in a large saucepan. Pour over the Champagne and bring to a boil. Reduce the heat and cover with a lid. Simmer gently for 20 minutes or until the chicken breasts are thoroughly cooked.

2. Meanwhile, heat the oil in a non-stick frying pan and fry the mushroom over a high heat for 2-3 minutes turning occasionally until golden. Strain the chicken, reserving the liquor. Put the chicken on a plate and keep warm.

3. Add the reserved liquor to the mushrooms and simmer hard for 4-5 minutes until well reduced. Lower the heat and stir in the cream and tarragon. Simmer gently for 2 minutes, until the sauce has thickened slightly, stirring occasionally. Season to taste and serve over the chicken.
