
With Champagne for her real friends, Wendy cooks up a storm for her Come Dine With Me East Yorkshire guests.
1. Place the chicken breasts in a single layer in a large saucepan. Pour over the Champagne and bring to a boil. Reduce the heat and cover with a lid. Simmer gently for 20 minutes or until the chicken breasts are thoroughly cooked.
2. Meanwhile, heat the oil in a non-stick frying pan and fry the mushroom over a high heat for 2-3 minutes turning occasionally until golden. Strain the chicken, reserving the liquor. Put the chicken on a plate and keep warm.
3. Add the reserved liquor to the mushrooms and simmer hard for 4-5 minutes until well reduced. Lower the heat and stir in the cream and tarragon. Simmer gently for 2 minutes, until the sauce has thickened slightly, stirring occasionally. Season to taste and serve over the chicken.
