
Peter perked up his Celebrity Come Dine With Me guests with a fruity little pie
1. Preheat the oven to 220˚C /Gas 7.
2. Whip the ice cream until soft then add the vodka to taste. Be warned that if you add too much it won’t refreeze! Return the ice cream to the freezer to set.
3. Slice the strawberries and in a bowl add the raspberries and the caster sugar. Roll out the pastry on a lightly floured board to make a roughly 25cm circle.
4. Place the pastry on a large baking sheet lined with baking parchment and pile the fruit into the middle, leaving a border all round of approx 1.25cm.
5. Brush the pastry border with the egg white to glaze and bake for around 15 minutes until the pastry is risen and golden brown.
6. Serve a slice of the pie with a dollop of the ice cream and a sprinkling of icing sugar if desired.
