There was stiff competition on Come Dine With Me Torbay with this lamb stifado

Serves 6

Ingredients

  • 1 whole leg of lamb
  • 1 medium onion, peeled and finely chopped
  • 3 garlic cloves, peeled and finely chopped
  • 900g shallots, peeled
  • 2 beef tomatoes, roughly chopped
  • 400g can chopped tomatoes
  • 125ml tomato juice
  • 250ml olive oil
  • 250ml red wine
  • 125ml white wine vinegar
  • 4 bay leaves
  • 2 sprigs rosemary
  • Salt and freshly ground black pepper

Method: How to make lamb stifado

1. Preheat the oven to 180°C/Gas 4. Place the lamb leg in a large ovenproof dish - ideally one with a lid rather than a roasting tin.

2. Put the onion, garlic, shallots, beef tomatoes and canned tomatoes in a large saucepan. Stir in the tomato juice, olive oil, red wine, vinegar and herbs. Season with plenty of salt and pepper and bring to the boil, stirring occasionally.

3. Pour the hot sauce over the lamb and cover the dish tightly. You can use foil if you don’t have a lid. Cook in the centre of the oven for about 3½ hours or until the meat falls away from the bone and the sauce is thick. Check every hour, spooning the sauce over the lamb each time. Serve hot in chunky pieces with plenty of the sauce.

  1. Just saw this episode last week, we get in on cable here in OZ and I love the show. The Lamb Stifado has to be the best dish cooked on the program so far. Just a few points to remember, the recipe called for "red wine vinegar" initially but as she had none she used "white wine vinegar", which probably accounts for the vinegary taste. Also the oil content must be reduced by about half, as she said she didn't measure it and it was way too much. Definately brown the leg before hand as this will not only reduce fat content but seal in more flavour. I can't wait to do this for my dinner party. I would also love the recipe for those Crab Cakes she made, with a little lime mayo they will be fabulous!!

  2. made it today used shoulder instead of leg very nice,but only made it for 2 so need to alter amounts , couple of tea spoons of suger added to the sauce as boiling brings out more favour ..(use this in all tomarto suaces it works) very nice thanks

  3. Tried this recipe although used white wine instead of white wine vinegar as I had run out. The flavours were fantastic and the lamb extremely tender. Would recomend anyone to try it.

  4. i made this last night but didnt use any vinegar and only used 125ml of olive oil. i seared the meat first and used home grown tomatoes instead of beef tomatoes. i will definitely make this again but will only use 125ml of tomatoe juice, it was delicious and so easy to do.

  7. Cooked this on Saturday night, was fab although thought too much vinegar, so cut out the white wine vinegar, smelt vinegar but cooked lovely. One of my guests thought it was the best lamb ever....

  8. well i tried it for fathers and it tasted rather vinegary! So i would suggest using less white wine vinegar..was a shame as it looked lovely on the programme!

  9. I cooked the lamb stifado and it was lovely. The recipe didn't say to seal the meat, but I know that Carol did in the programme, and I did too. I reduced the amount of oil that the receipe suggested, from 250ml to 125ml and slightly increased the tomato juice to 150ml. I also used whole cherry tomatoes instead of chopping up beef tomatoes, but the result was enjoyed by everyone. I will definitely cook this again.
