Alison served up a bit of Italy on Come Dine With Me Torbay

Serves 6

Ingredients

  • 1kg lean minced beef
  • 2 medium onions, peeled and finely chopped
  • 2 garlic cloves, peeled and crushed
  • 2 x 400g cans chopped tomatoes
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tbsp dried mixed herbs
  • 375ml red wine
  • 1 beef stock cube
  • 75g extra mature Cheddar
  • 10-14 sheets no-precook lasagne
  • Salt and freshly ground black pepper
  • Selection of salads, to serve

For the white sauce

  • 40g butter
  • 40g plain flour
  • 425ml milk
  • ½ tsp finely grated nutmeg

Method: How to make homemade lasagne

1. Fry the mince in a large non-stick saucepan with the onion and garlic until no pinkness remains. Stir regularly to break up the mince. Empty the tomatoes into the saucepan and stir in the herbs and red wine.

2. Crumble over the stock cube and bring the ingredients to a simmer. Cook, uncovered, over a medium heat for about 45 minutes, stirring occasionally until the meat is tender and the sauce thick. Season to taste and remove from the heat. Preheat the oven to 180°C/Gas 4.

3. To make the sauce, melt the butter in a large non-stick pan and stir in the flour. Cook over a gentle heat for a few seconds, then gradually add the milk. Stir continuously until the sauce is thickened and smooth. Stir in the nutmeg and season to taste with salt and pepper.

4. Spoon half the mince into a large ovenproof dish. Cover with a single layer of lasagne sheets and spoon over half the white sauce. Repeat the layers ending in the sauce. Sprinkle with the cheese. Bake the lasagne for 50-60 minutes or until golden brown and bubbling. Serve with a selection of salads.
