Design darling, Linda Barker, gave her lamb the herb crust look in Celebrity Come Dine With Me

Serves 4

Ingredients

  • 4 slices day-old bread, roughly torn
  • Small bunch each of chives, mint and parsley
  • 1 garlic clove, peeled
  • 2 x racks of lamb, each with 6-7 cutlets, trimmed
  • 2-3 tbsp olive oil
  • Salt and freshly ground black pepper
  • Freshly made mint sauce, to serve

Method: How to make herb crusted lamb

1. Preheat the oven to 220˚C/Gas 7.

2. Put the bread, herbs and garlic in a food processor and blend into crumbs. Add plenty of seasoning and 2-3 tbsp olive oil. Blend until the mixture begins to come together.

3. Place the lamb in a roasting tray and press the crumb mixture evenly onto the skin-side. Cook for 20 minutes for rare meat, 30 minutes for medium and 40 minutes for well done lamb. Rest for 10 minutes before carving. Serve with mint sauce.
