
Serve these goat's cheese tartlets from Come Dine With Me Torbay hot with a mixed leaf salad, drizzled in balsamic dressing
1. Heat the oil in a medium saucepan and gently for the onions for 10 minutes or until very soft and lightly coloured, stirring regularly. Add 15g of the butter and 3 tbsp of the sugar and stir until the sugar dissolves.
2. Pour over the balsamic glaze and cook over a fairly high heat, stirring constantly until the sugar caramelises and the onions become thick and glossy. Remove from the heat. Preheat the oven to 200°C/Gas 6.
3. Melt the remaining butter in a non-stick frying pan. Cut the figs in half and fry for 1-2 minutes in the butter until becoming browned around the edges. Unroll the pastry onto a lightly floured surface and cut into six equal squares with a sharp knife. Place on a large, sturdy baking tray and sprinkle each one with a little of the remaining sugar.
4. Spoon a little of the caramelised onion into the centre of each pastry square and top with figs. Crumble the goat’s cheese on top. Bake the tartlets for 15-20 minutes until the pastry is puffed up and golden brown. Serve hot with a mixed leaf salad, drizzled in a little balsamic dressing.
