
Carol kicked off her Come Dine With Me Torbay menu with these crabmeat cakes
1. Put the crabmeat and 270g of the breadcrumbs into a large bowl. Add the lemon juice, egg yolks and plenty of salt and pepper. Stir well until all the ingredients are combined into a thick paste.
2. Scatter the remaining breadcrumbs over a plate. Take a handful of the crab mixture and form into a ball. Pat fairly flat and coat lightly in the reserved breadcrumbs. Put on a small tray lined with baking parchment. Repeat with the remaining mixture until you have made six good-sized crab cakes. Cover tray with clingfilm and chill for 30 minutes.
3. Heat the oil in a large non-stick frying pan and cook the crab cakes gently for 5-6 minutes on each side until nicely browned and hot throughout. Serve with a salad garnish and lemon wedges for squeezing.
