
Gavin served these chocolate puds topped with strawberries and cream on Come Dine With Me Torbay
1. Pre-heat the oven to 180°C/350°F. Butter eight individual metal pudding basins and dust with flour. Put on a baking tray.
2. Melt the butter with the chocolate in a heatproof bowl over a pan of gently simmering water until smooth. Remove from the pan and set aside.
3. Whisk the eggs, yolks and sugar in a large bowl for about 5 minutes until the mixture is light, fluffy and doubled in volume. Whisk the flour into the melted butter and chocolate and then fold lightly into the egg mixture.
4. Spoon the pudding batter into the prepared basins and bake in the centre of the oven for 8-10 minutes. The puddings should be well risen, but not fully cooked in the centre. Watch carefully, if they are undercooked, the puddings will collapse when they are turned out. If they are baked for too long, they will be solid in the centre.
5. Carefully loosen the sides of each pudding with the point of a knife and turn onto dessert plates. Use an oven cloth or thick, dry tea towel to help you as the basins will be very hot. Serve at once with fresh strawberries and cream.
