
Amanda shows off her local credentials with a custard recipe from Aberdeenshire for her Come Dine With Me Aberdeen pudding
1. Preheat the oven to 180°C/gas mark 4. Put the cherries in a shallow ovenproof dish or pie dish. Rub the flour and margarine together until the mixture resembles fine breadcrumbs. Stir in the sugar and almonds then sprinkle over the cherries and cook in the centre of the oven for 20-25 minutes until the topping is pale golden brown.
2. For the custard, put the cream and vanilla seeds in medium saucepan and bring to the boil. Remove from the heat and leave to stand for 2 minutes.
3. Whisk the egg yolks and sugar together in a large bowl, then pour the warm cream over and stir well. Return to the saucepan and cook over a very low heat, stirring constantly until the mixture coats the back of a wooden spoon. Do not allow to overheat. Serve with the crumble.
