Create a sensation with these banana crêpes with a creamy Foster sauce from Celebrity Come Dine With Me.

Serves 4

Ingredients

  • 4 medium free-range eggs
  • ¼ cup melted butter
  • 2 ¼ cups milk
  • 2 cups plain flour
  • 2 tbsp caster sugar
  • ¼ tsp salt
  • Vegetable oil for frying
  • Vanilla ice cream, to serve

For the bananas:

  • ¼ cup butter
  • 2/3 cup dark brown sugar
  • 2½ tbsp water
  • 1 tbsp lemon juice
  • 1½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • 3 medium bananas, peeled and sliced

Method: How to make banana crêpes with Foster sauce

1. To make the crêpes, put the eggs, butter, milk, flour, sugar and salt into a blender and mix well. Leave to sit in fridge for at least one hour, then stir well before using.

2. Heat a small non-stick frying pan until smoking, add a little oil and carefully wipe over the pan with a thick wad of kitchen paper. The pan and oil will be very hot.

3. Add a ladleful of crêpe batter and swish around the pan until the base is evenly, but thinly, covered. Cook until lightly browned, then loosen the edges and flip over with a spatula. Cook on the other side until lightly browned. Transfer to a plate and keep warm in a low oven while the remaining crêpes are cooked.

4. To prepare the bananas, melt the butter in a small frying pan over a medium heat. Stir in the brown sugar, water, lemon juice, vanilla, and cinnamon. Cook until the mixture begins to bubble. Add the bananas and cook for 1-2 minutes until they are heated thoroughly.

5. Serve two crêpes for each person, filled with the hot bananas and topped with vanilla ice cream.
