
Elegant and appetising, Eleanor's pudding brought a bit of sweetness to the evening on Come Dine With Me Southampton
1. Combine the biscuits, coconut and melted butter together. Press into the base of a 23cm loose-based, spring-clip cake tin. Chill in the fridge until set.
2. Place chocolate and butter in a heatproof bowl over a pan of gently simmering water. Leave to melt, stirring once or twice, then allow to cool.
3. In another bowl, beat together the cheese, sugar and cream until smooth. Stir the chocolate mixture into the cream and fold in the raspberries. Pour into the biscuit base. Cover very loosely and chill in the fridge for at least 8 hours or until set. Remove from tin carefully before serving.
