1. Mix together all the marinade ingredients. Reserve half the marinade to make a sauce for serving over the fish and put the remainder in a large, shallow dish. Add the fish fillets and turn to coat in the marinade. Cover and chill in the fridge for 1 hour.
2. Heat the oil in a large, non-stick frying pan and add the fish, skin side down. Cook over a high heat for 2-3 minutes, then remove from the hob and leave in the pan for a few minutes until the fish is cooked through and the skin is crisp.
3. Transfer to four warmed plates, skin side up, and spoon over the reserved sauce to serve.
