Serves 2 - 3

Ingredients

  • 175g brown rice
  • 2 tsp ground turmeric
  • A pinch of sea salt
  • 2 tbsp vegan margarine
  • 1 medium onion, roughly chopped
  • 2 small garlic cloves, peeled and crushed
  • 2cm piece fresh root ginger, peeled and finely grated
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp chilli powder
  • 2 tsp garam masala
  • 2 large tomatoes, skinned and chopped
  • 115g fresh green beans, trimmed, sliced and steamed until tender
  • 2 small carrots, peeled, sliced and steamed until tender
  • 115g fresh peas, steamed until tender
  • Soya yoghurt and cherry tomatoes fried in vegan margarine, to serve

Method: How to make vegetable pilau

1. Place the rice in a large bowl and cover with boiling water. Leave overnight then drain and transfer to a large pan. Add turmeric and a pinch of salt. Cover with cold water. Bring to the boil and cook for about 20 minutes or until tender.

2. Melt the margarine in a saucepan and gently fry the onion, garlic and ginger until softened. Reduce the heat and stir in the spices. Cook for 2-3 minutes to release all the flavours, then add the tomatoes and cook for two minutes more, stirring constantly. Stir in the steamed vegetables and cook until heated through.

3. Drain the rice and spoon half over the base of a warmed ovenproof dish. Top with the vegetable mixture and finish with the remaining rice. Serve with soya yoghurt and cherry tomatoes lightly fried in vegan margarine
