Enjoy these vegan pancakes with lemon and sugar - or mix things up and serve them with a savoury filling.

Serves 4

Ingredients

  • 115g wholemeal flour
  • 55g soya flour
  • 250ml soya milk
  • 2 tbsp vegetable oil
  • Freshly squeezed lemon juice and caster sugar, to serve

Method: How to make vegan pancakes with lemon and sugar

1. Sift the flours into a medium bowl and gradually whisk in the soya milk to make a smooth batter. Stir in 2 tsp of the oil and place in the fridge for 30 minutes.

Tip:

Experiment with other fillings, like maple syrup, chocolate sauce, soya cream, soya ice cream, stir fried vegetables drizzled with peanut sauce, soya cream cheese and herbs, tofu and leeks.

2. Heat a medium, non-stick frying pan and add a little vegetable oil to grease. Pour in just enough of the batter to coat the base of the pan and cook over a medium-high heat for 1-2 minutes. When one side is cooked, flip over and cook the other side.

3. Remove from pan and keep warm whilst the remaining pancakes are prepared. Serve with lemon juice and sugar.
