
Francis goes summer strawberry-tastic to accompany his cheesecake on Come Dine With Me Dundee
1. Put the marscapone cheese, sugar, crème fraîche, double cream and the vanilla seeds in a large bowl. Beat together until smooth then divide between 6 and 8 small ramekins and place in the fridge to set.
2. Forty minutes before serving, transfer the cheesecakes to the freezer. Blitz the ginger biscuits to crumbs. Just before serving, remove the cheesecakes from the freezer and dust the tops with the ginger crumbs. Put on small plates.
3. Heat a large non-stick frying pan until hot. Add the strawberries and toss over the heat for about 30 seconds, moving constantly. Sprinkle with the sugar and cook for a further minute until they caramelise. Add the vinegar and toss for 30 minutes more. Spoon onto the plates with the cheesecakes and serve.
