
James tries to sweeten up his guests with this trio of chocolate mousses and fresh summer berries. Find out what else went on in Come Dine With Me Coventry
1. Bring a medium pan half filled with water to the boil. As soon as the water is boiling, take off the heat. Put the plain chocolate into a glass bowl with 30g butter. Place the bowl over the water and leave to melt – ensuring that no water escapes into the chocolate. Stir only occasionally. (Alternatively, melt the chocolate and butter together in the microwave.)
2. Once melted, remove the bowl from the saucepan and beat 2 of the egg yolks into the chocolate. Whisk 2 of the egg whites until soft peaks form and, using a metal spoon, gently fold into the chocolate mixture. Divide amongst four large wine glasses or dessert dishes and put in the fridge to set for a couple of hours.
3. Reheat the water in the pan and repeat the method with a clean bowl, containing milk chocolate this time, plus 30g butter. Spoon on top of the plain chocolate mousse and leave to set. Repeat the method using the white chocolate and remaining butter.
4. Remove the mousses from the fridge 15 minutes before serving and decorate with lightly whipped cream - flavoured with a few drops of vanilla essence - and some juicy raspberries.
