1. Mix the rosemary leaves and lemon zest on a board. Rub and massage the herb mixture into the pork fillets, then place in a bowl, cover and chill for 1-6 hours.
2. Preheat the oven to 200°C/Gas 6. Place the parsnips, pears and shallots in a medium roasting tin. Pour over the lemon juice and drizzle with the olive oil. Season with salt and pepper; toss well to coat.
3. Bake for 35-45 minutes until the parsnips are golden. Remove from the oven and turn the vegetables and pears. Add the pork fillet to the pan, placing on top of the parsnips and pears. Return to the oven for a further 25 minutes or until the pork is cooked through and the vegetables are tender. Slice the pork thickly to serve.
