
Seamus hopes to 'steak' his claim as the winner with this tenderloin of beef recipe on Come Dine With Me Norwich
1. Preheat the oven to 220ºC/Gas 7. Start by rubbing the olive oil firmly into and all over the meat and season generously with salt and pepper.
2.Place an ovenproof frying pan over a high heat and add the oil. When the oil is hot, place the beef into the pan. Allow each side to sear for about 1-1½ minutes.
3.Add the butter, thyme and the garlic to the pan. Allow it to warm through. Put the pan into the oven and leave to cook for 8 minutes. Every 2 minutes baste the beef all over with the juices. And turn the beef over to ensure even cooking on all sides.
4. When the meat has been cooked to your taste, carefully remove the pan from the oven. Place an inverted spoon on the tray. Using tongs, place the beef on top of the spoon to rest, so that air can circulate around it. Let it sit for a few minutes. Season with salt and pepper and serve.
