Vera bakes a classic tarte tatin to round off what she thinks is a perfect evening. But is it enough? Find out what else went on in Come Dine With Me Coventry

Serves 4

Ingredients

  • 50g butter, softened
  • 40g caster sugar
  • 1 egg
  • 115g plain flour, plus extra for dusting
  • Pinch of salt

For the apple layer

  • 75g butter, softened, plus extra for greasing
  • 75g soft light brown sugar
  • 10 Granny Smith apples, peeled, quartered and cored
  • Whipped cream, to serve

Method: How to make tarte tatin

1. Cream the butter and sugar in a bowl with a wooden spoon until pale. Beat in the egg, then sift the flour and salt over and mix to a soft dough. Knead lightly on a floured surface, then wrap in cling film and chill for 1 hour.

2. Preheat the oven to 230°C/450F/Gas 8. To prepare the apples, grease a 23cm good quality cake tin, ovenproof frying pan or a round heatproof dish and add 50g of the butter. Place the dish on the hob and gently melt the butter. Remove from the heat and sprinkle over 50g of the sugar. Carefully arrange the apples on top – the tin will be hot - and pack snugly, rounded side down, over the butter and sugar, trimming to make a tight fit if necessary. Sprinkle with the remaining sugar and dot with the rest of the butter.

3. Roll out the pastry on a lightly floured surface to around the same size as the tin and place on top of the apples. Tuck the pastry edges down around the sides of the apples – use a blunt ended knife to help you. Bake for 20–25 minutes until the pastry is golden and the apples are cooked – cover with foil and cook for a few minutes longer if the apples remain hard when tested with a skewer. Remove the tart from the oven and leave to stand for 5 minutes.

4. Place an upturned serving plate on top of the tin and holding the two together with a dry tea towel, carefully turn the apple tart out onto the plate. Serve warm with whipped cream.
