Berry nice... Chris decorates berries with cream, sponge fingers and mint to sweeten up his Come Dine With Me Manchester guests

Serves 6

Ingredients

  • 110g caster sugar
  • 1 vanilla pod
  • 700g prepared soft summer fruit, such as blackcurrants, cherries, gooseberries, mulberries, strawberries, raspberries, redcurrants, washed and drained
  • 1 pack sponge fingers
  • Fresh mint sprigs, to decorate
  • Double cream, to serve

Method: How to make summer fruit pudding

1. Put the sugar in a large saucepan. Split the vanilla pod lengthways and scrape the seeds onto the sugar. Pour over 5 tbsp cold water and heat gently until the sugar dissolves, stirring occasionally. Use a whisk to ensure the vanilla seeds are evenly distributed throughout the syrup.

2. Reserve a few of the berries for decoration and put the rest in the sugar syrup. Cook over a low heat until the fruit is softened but retains its shape. Remove from the heat and leave to cool for 15 minutes. Add more sugar to sweeten the syrup if necessary.

3. Arrange the sponge fingers vertically around the sides of a souffle dish or large loaf tin lined with cling film. Place more sponge fingers tightly over the base, trimming to fit where necessary. Retain 3 tbsp of the fruit syrup and pour the remaining syrup and fruit into the dish.

4. Shake lightly, without tipping, to ensure the fruit covers the sponge evenly. Arrange the remaining sponge fingers over the fruit until completely covered. Leave to cool, then cover and chill for several hours or overnight.

5. When ready to serve, invert the pudding onto a serving dish and remove the cling film. Spoon the remaining sugar syrup over and decorate with the reserved berries and sprigs of mint. Serve with double cream.

  1. Why are we constantly urged to check the website if we want to try the contestants recipes, only to find time and again thet the same recipes are "copywrited"?
