Francis brings a taste of summer to Come Dine With Me Dundee
1. Put the tomatoes in a bowl and stir in about ½ tsp salt. Leave to stand for 10 minutes.
2. To make the dressing, put the oregano, lemon juice, vinegar and a good pinch of pepper in a bowl and whisk together. Slowly add the olive oil and whisk until the dressing emulsifies. Season to taste and set aside.
3. To make the pesto, put the basil leaves, Parmesan, garlic and pine nuts in a food processor with the oil and blend until the ingredients are well combined. You may need to remove the lid and push the mixture down a couple of times. Add more oil if the pesto seems to be too thick. Season with salt and pepper.
4. Slice the ciabatta and drizzle on both sides with olive oil. Toast on a preheated hot griddle pan for about a minute on each side or until nicely browned. Put on a serving platter. Spread each toast with a little of the pesto and top with 3-4 basil leaves. Spoon some tomatoes onto each bruscetta. Add a few shavings of Parmesan and drizzle with a little of the dressing. Season with some ground black pepper and serve.
