Marie begins the evening with a classic poached eggs and hollandaise combination with smoky fish cakes. Find out what else went on in Come Dine With Me Coventry

Serves 4

Ingredients

  • 350g smoked haddock fillet, poached in milk for 6-8 minutes and drained
  • 675g boiled, peeled potatoes, mashed with 25g butter
  • 1 small onion or 4 spring onions, finely chopped
  • 85g cheddar cheese, grated
  • 1 egg
  • 1 tbsp milk
  • 65g fresh white breadcrumbs
  • 3 tbsp chopped fresh parsley
  • Salt and freshly ground black pepper
  • 4 freshly poached eggs, 125ml warm ready-made hollandaise sauce and a few sprigs fresh watercress, to serve

Method: How to make smoked haddock fish cakes with poached eggs

1. Flake the fish into chunky pieces and place in a large bowl. Add the mashed potatoes, onion and cheese. Season with salt and pepper and mix well. Form the mixture into 8 rounds and flatten into fishcake shapes. Place on a tray and chill for 30 minutes.

2. Preheat the oven to 190°C/Gas 5. Line a large baking tray with baking parchment. Beat the egg with the milk in a medium bowl. Toss the breadcrumbs and parsley together in a large bowl.

3. Dip each fishcake first into beaten egg then coat with the parsley breadcrumbs. Place carefully on the lined tray and bake in the centre of the oven for 20 minutes until pale golden brown and heated through. Serve two fishcakes per person, topped with a poached egg and a little hot hollandaise sauce. Garnish with fresh watercress.
