
Claudette brightens up proceedings with her creamy red pepper soup. Find out what else went on in Bournemouth.
1. Heat the oil in a medium pan and gently cook the peppers, tomatoes and red onion for about 10 minutes until soft, stirring occasionally.
2. Dissolve the stock cube in the water and pour into the pepper mixture. Bring to the boil, then reduce the heat slightly and simmer for a further 5 minutes. Remove from the heat and leave to cool for 20 minutes.
3. Transfer to a liquidiser and blend until smooth. (Alternatively, use a stick blender.) Press through a sieve into a clean pan and season with a little white pepper. Heat through gently and serve hot, topped with a little crème fraîche.
