
David rounded off his rich menu in Come Dine With Me Norwich with this plums poached in port with ginger cream recipe
1. Halve the plums and carefully remove the stones. Put the port in a pan with the caster sugar and cinnamon stick; bring to the boil.
2.Reduce the heat to a gentle simmer, add the plums and cook until soft but not mushy. Set aside and leave to cool.
3. In a large bowl, whip the cream with the icing sugar and ground ginger until it forms soft peaks. Finely chop the stem ginger and fold into the cream.
4.Serve the plums with a generous splodge of the cream and decorate with the cinnamon stick, broken into shards - though do point out to dim guests that it’s not to be eaten, as a recent guest of mine did.
