
This simple starter helped keep Sonia from Bournemouth cool at her dinner party. Quick and easy to prepare it's a sure fire winner at any dinner party
1. Cut each lemon sole fillet into 6 strips. Beat the eggs in a medium bowl. Put the plain flour and breadcrumbs on to two separate plates.
2. Heat 3 tbsp of the olive oil in a large non-stick frying pan. Dip the fish into the flour, coating both sides then dip in the egg and the breadcrumbs, making sure to coat both sides of the fish each time. Drop immediately into the hot oil and fry over a medium heat for about 2 minutes on each side until crisp, golden brown and cooked through. Turn with a spatula or tongs.
3. While fish is frying, cut the cucumber into very thin slices, allowing approximately 12 slices per person. Slice the garlic in the same way, allowing around half a clove per person. Arrange the cucumber and garlic in the centre of four plates.
4. To make the dressing, use a fork to mix the remaining oil with the balsamic vinegar and English mustard. Season with a couple of twists of freshly ground black pepper. Using a small measuring spoon, drizzle a little of the vinaigrette over the prepared cucumber and garlic. Drain the fish on kitchen paper, then place 3 strips on each plate. Serve immediately.
