1. To make the lime sauce, mix together the honey, lime juice, soy sauce, salt, ginger, cayenne pepper and 2 tbsp water. This can be made a few hours in advance and kept in the fridge until needed.
2. Heat the oil in a large, high-sided frying pan or wok over a medium heat. When hot, add the chicken breasts and cook on one side for 4-5 minutes, until nicely browned. Turn the chicken over and add the garlic to the pan. Reduce the heat to medium-low.
3. Stir the reserved sauce into the pan and bring to the boil carefully as it may splatter. Simmer for around 6 minutes or until chicken is cooked through.
4. Remove the chicken to a warm serving plate and boil the sauce hard for 1-2 minutes to reduce to a syrupy consistency. Continually stir the sauce using a wooden spoon to loosen all the sediment from the bottom of the pan. Place the chicken on potato pancakes, if liked, and spoon the sauce over to serve. (The sauce is quite rich so don’t feel obliged to use it all.)
