Serve this soup from Come Dine With Me Dundee in large, warmed bowls with smokies and freshly baked scones and butter.

Serves 6

Ingredients

  • 1 large onion, peeled and coarsely grated
  • 5 medium carrots, peeled and coarsely grated
  • 4 medium potatoes, peeled and coarsely grated
  • 1 turnip, peeled and coarsely grated
  • 5 tbsp red lentils
  • 225g unsmoked gammon joint
  • Salt and freshly ground black pepper
  • Freshly made scones with butter, to serve

For the Arbroath smokies on toast

  • 2-3 Arbroath smokies (hot smoked haddock), skinned and boned
  • 15g softened butter
  • 6 slices fresh seeded bread, toasted

Method: How to make homemade lentil and vegetable soup with Arbroath smokies

1. Put all the grated vegetables in a large saucepan and stir in the red lentils. Place the bacon joint in the centre and cover with cold water. Bring to the boil, then reduce the heat, cover with a lid and leave to simmer very gently for about 2 hours, stirring occasionally. Add extra water if necessary.

2. Remove from the heat and transfer the meat to a board. Cut into small pieces, then return to the soup and reheat gently, stirring constantly. Adjust seasoning to taste. (You probably won’t need any extra salt.)

3. To make the smokies on toast, mash the fish with the butter and spread onto hot toast. Place under a preheated medium grill and cook for 1-2 minutes until hot. Serve the soup in large, warmed bowls with the smokies and freshly baked scones and butter.
