Pastry chef Claudette stakes her reputation on this lemon tart. Find out what else went on in Bournemouth
1. To make the pastry, heat the oven to 150°C. Place all dry ingredients in a bowl, and mix into a fine crumble, then add the egg to produce a firm paste.
2. Using a little flour, roll out your pastry a little larger than your flan case, gather the pastry round your rolling pin, and lay it across the top, allow the pastry to drop down, using your fingers press the pastry in to the corners and base of the flan case, then press it firmly to the sides, and trim off the extra pastry.
3. Using the cling film, line your case, and leave enough to wrap over the top of the beans, fill the case with baking beans, and wrap round the remaining film, place in the oven and bake for 15 minutes, take out the beans and bake for a further 10 minutes, or until your case is golden in colour. Leave to cool.
1. Place all the ingredients into a mixing bowl and beat with a whisk.
2. When the sugar dissolves pour the mixture into the flan case and bake for approximately 30 mins. This recipe is very sensitive to heat, and it is easy to over-bake, so take care. It's ready when the mix turns solid.
