1. Mix the wine, sugar, lemon zest and juice in a large bowl and leave to stand for a minimum of 2 hours or chill overnight.
2. Stir the cream into the wine mixture then whip using an electric whisk until the mixture holds in soft peaks – do this slowly at first until mixture thickens or it will spatter out of the bowl. Spoon into tall wine glasses. Serve with lavender langue de chat biscuits if liked.
