Serves 4

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 garlic clove, finely chopped
  • 200ml good fish or chicken stock
  • 125ml dry white wine
  • 8 fresh lemon sole fillets
  • 100ml double cream
  • 1 tbsp fresh thyme leaves, finely chopped
  • 1 tsp freshly chopped parsley
  • Salt and freshly ground black pepper

Method: How to make lemon sole with a white wine and thyme sauce

1. Heat the oil in a large non-stick saucepan and cook the onion and garlic for 3-4 minutes until softened and just beginning to colour. Add the stock and wine and bring to the boil. Remove from the heat.

2. Season the sole with salt and pepper, then carefully place the fish in the pan – skin side down - and return to a gentle simmer. Poach the fish for roughly 3-4 minutes until just cooked. Remove carefully using a spatula or slotted spoon and place on a warmed platter.

3. Add cream, thyme and parsley to the stock and wine and bring to the boil. Boil hard for 2-3 minutes until the sauce is well reduced. Adjust seasoning to taste then pour over the fish and serve.
