The wining and dining continues with James' fish main, a lemon sole with a delicate white wine and thyme sauce. Find out what else went on in Come Dine With Me Coventry
1. Heat the oil in a large non-stick saucepan and cook the onion and garlic for 3-4 minutes until softened and just beginning to colour. Add the stock and wine and bring to the boil. Remove from the heat.
2. Season the sole with salt and pepper, then carefully place the fish in the pan – skin side down - and return to a gentle simmer. Poach the fish for roughly 3-4 minutes until just cooked. Remove carefully using a spatula or slotted spoon and place on a warmed platter.
3. Add cream, thyme and parsley to the stock and wine and bring to the boil. Boil hard for 2-3 minutes until the sauce is well reduced. Adjust seasoning to taste then pour over the fish and serve.
