Serves 4

Ingredients

  • 600ml double cream
  • 135g caster sugar
  • Freshly squeezed juice 2 lemons
  • 6 Italian rolled wafers, roughly crushed

Method: How to make lemon posset with crushed Italian wafers

1. Pour the cream into a large saucepan over a medium-high heat and stir in the sugar. Bring to the boil and cook for 3 minutes, stirring regularly.

2. Remove from the heat and whisk in the lemon juice. Strain the mixture through a fine sieve into a jug. Pour into four large ramekin dishes set on a small tray. Chill for 4-6 hours until set.

3. Just before serving, sprinkle with crushed Italian rolled wafers.
