Serves 4-6

Ingredients

  • 1kg les cuisses de grenouilles (frog’s legs), thawed if frozen
  • Olive oil, for frying
  • Glass white wine
  • Large knob butter
  • Freshly squeezed lemon juice
  • Salt and freshly ground black pepper

Method: How to make fried frog's legs

1. Fry the frog’s legs in a wok with olive oil until crisp and cooked through – you may need to do this in batches and then return to the wok.

2. Pour over the wine and simmer fiercely. Add the butter and allow to melt into the sauce. Season with lemon juice and salt and pepper to taste.
