Sonia served up this steak and mash medley to her cooking competitors on Bournebouth. It's a great way to spruce up steak

Serves 4

Ingredients

  • 8 medium white potatoes, peeled and cut into roughly 4cm chunks
  • 1 medium swede, peeled and cut into roughly 4cm chunks
  • 8 medium carrots, peeled and thinly sliced
  • 1 tbsp olive oil
  • 4 x 150g fillet steaks
  • A large knob of butter
  • 5-6 tbsp warmed milk
  • Salt and freshly ground black pepper
  • Horseradish cream, to serve (optional)

Method: How to make fillet steak with creamy potato, suede and carrot mash

1. Put the potatoes and swede in a large saucepan half filled with lightly salted water and bring to the boil. Reduce the heat slightly and simmer for 15-20 minutes or until the vegetables are very soft but not falling apart. After the potatoes have been boiling for 10 minutes, start to cook the carrots in a medium pan of boiling water for 10-12 minutes until very tender.

2. Heat the oil in a griddle pan over a medium-low heat. Griddle the steaks for 10 minutes, turning every couple of minutes until cooked. This will result in medium cooked steaks, if you prefer your steak well done cook for a few minutes more; for rare, cook over a medium-high heat for a few minutes less. Rest the steaks for 3-4 minutes before serving.

3. Drain the vegetables and then return all of them to the large pan and add the butter and a splash of milk. Start mashing, gradually adding the rest of the milk until smooth and creamy (You may need to transfer to a large bowl and beat with an electric whisk to obtain a really smooth texture.) Season to taste. Serve the steaks with the vegetable mash and pan-steamed mushrooms and vine tomatoes, adding a little horseradish sauce to taste.

Try serving the steak with pan-steamed mushrooms and vine tomatoes cooked up with crème fraiche, lemon juice and torn basil leaves
