
Seamus accompanies his main with an always impressive duchesse potatoes recipe on Come Dine With Me Norwich
1. Cook the potatoes in a pan of salted boiling water for about 7 minutes until soft.
2.Drain the potatoes and return to the pan. Mash with the butter, cream, salt and pepper and nutmeg until smooth.
3.Place the mash into a piping bag fitted with a large nozzle and pipe into rounds on a non-stick-baking tray. Bake in the oven for 5-6 minutes or until crisp and golden.
