Dhalls are an important accompaniment in all Indian meals in the north and south. Adish from Come Dine With Me Oxford served her dhall alongside a traditional thali, a selection of regional Indian dishes

Serves 4

Ingredients

  • 1 cup toor dhall
  • Salt to taste
  • 1/8 tsp asafoetida
  • 1 tsp finely chopped fresh root ginger
  • 5 garlic cloves, peeled
  • 1 green chilli, finely chopped
  • 2 tbsp sambar masala
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • 1 tbsp finely chopped fresh coriander, to garnish

For the tarka (fried spices)

  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tbsp curry leaves
  • 2 dried chillies, crumbled
  • 1/8 tsp asafoetida
  • 1 onion, peeled and finely chopped

Method: How to make dhall

1.Wash the toor dhall and place in a pressure cooker with a good pinch of salt, the asafoetida, ginger, garlic, chilli, sambar powder, turmeric and garam masala. Cook according to the manufacturer’s instructions, you’ll need to add the appropriate amount of water, then leave to cool.

2.To prepare the tarka, heat the oil in a small pan. Add the mustard seeds, curry leaves, dried chillies and asafoetida. Stir fry until the seeds crackle, then add the onion and cook until golden.

3.Spoon over the dhall, garnish with chopped coriander and serve.

Adish served the dish alongside a traditional thali, a selection of regional dishes which included aubergine in coconut milk, boondi raita , tofu sambal, soya curry, lemon rice, carrot salad, fried potatoes and deep-fried plantain.
