1. Beat the eggs, milk and sugar together. Arrange the croissants in overlapping slices in a buttered, ovenproof dish. Sprinkle in between the slices with raisins and sultanas. Pour over the egg mixture and leave to soak for at least 30 minutes before baking.
2. Cook in a preheated oven at 180°C/Gas 5 for 25-30 minutes until golden and set. Serve with pistachio ice cream.
