1. Skin the smokies and put the skins in a medium saucepan. Cover with 1 litre of water and bring to the boil. Simmer for 20 minutes - this will be your stock. Remove any bones from the smokies and break the flesh into chunky pieces.
2. Strain the stock through a fine sieve into a clean pan. Add the potatoes, onions and one of the smokies. Bring to a simmer and cook for about 20 minutes or until the vegetables are very soft. Remove from the heat and blitz with a hand-blender until as smooth as possible.
3. Return to the heat and add the cream and remaining fish. Bring to a gentle simmer, stirring constantly, and season to taste. Serve in warmed bowls.
