
Outspoken Eleanor served up this tasty little tart on Come Dine With Me Southampton
1. Preheat the oven to 220°C/Gas 7. Roll out pastry on a lightly floured board very thinly to around 3 mm. Cut out 6 discs using a 15 cm saucer or side plate as a guide. Place on two greased baking sheets.
2. Put a large basil leaf onto each pastry disc and spoon caramelised onions on top. Add a halved cherry tomato - seed side up. Crumble over the goat's cheese and sprinkle pine nuts on top. Season with salt and pepper.
3. Bake in the oven, one tray above the other, for 12-15 minutes until the pastry is puffed up and golden brown. Swap the trays over after 8 - 10 minutes. Serve with rocket salad and balsamic dressing.
